Square Sausage Dinner Ideas: Beyond Breakfast

, 5 min reading time

Take square sausage beyond the breakfast roll with five adaptable dinner ideas and practical advice on making use of a larger pack.

Square sausage is at home in a morning roll, but it can also be the starting point for an easy evening meal. Its flat shape works with mash, vegetables, bread and simple sauces. Changing the accompaniments gives you several different dinners without turning every plate into another cooked breakfast.

These are adaptable meal ideas using bought Lorne sausage, rather than a recipe for making sausage from scratch. Choose a pack from our square and Lorne sausage collection, follow its preparation instructions and adjust the portions to your household. If the names are unfamiliar, our square sausage guide explains the basics.

1. Square sausage, mash and onion gravy

For a straightforward supper, serve cooked Lorne beside mashed potatoes, softened onions and gravy. Peas, green beans or cabbage give the plate a vegetable component without competing with the sausage's seasoning. Keep the gravy in a jug if you prefer to retain the browned surface of the meat.

Start the potatoes first, then prepare the onions and your chosen gravy while they cook. Cook the sausage separately according to its label and finish the vegetables close to serving. Mash the potatoes to the texture you like, adding only ingredients that suit everyone eating.

This is an easy meal to scale down for one or two people because each element can be prepared in the amount needed. It also works for a family table: put mash and vegetables in shared bowls and serve the sausage in individual portions.

2. Lorne sausage with roasted vegetables

Pair square sausage with roasted carrots, onions, peppers or squash and a portion of potatoes. Cut the vegetables into reasonably even pieces so they cook at a similar pace. Choose two or three vegetables rather than buying a large assortment that leaves lots of small amounts unused.

Cook the vegetables by your preferred method, and prepare the sausage separately using its own directions. A vegetable roasting time is not automatically a suitable sausage cooking time. Separate preparation also makes it easier to serve the vegetables to someone choosing a different main ingredient.

Finish with mustard on the side or a spoonful of gravy. If the vegetables are already richly seasoned, taste before adding more salt to the plate. You can keep the meal simple by serving it with bread instead of another potato dish.

3. A warm Lorne sausage flatbread

Turn the cooked sausage into a warm flatbread filling with shredded cabbage, grated carrot and a spoonful of your preferred dressing. Slice the fully cooked sausage into manageable strips on a clean board, then add it to bread warmed according to its instructions.

The contrast is the point: warm, savoury sausage with crisp vegetables and a little sharpness from mustard or pickles. Do not overload the bread. A smaller filled flatbread with extra salad alongside is easier to eat than one that falls apart as soon as you lift it.

If you prefer a familiar Scottish roll, the same filling can go into a morning roll. Our breakfast roll ideas offer other combinations, including onions and mushrooms.

4. A square sausage and mushroom supper sandwich

For an informal evening meal, use toasted bread, a cooked slice of square sausage and mushrooms cooked until their excess moisture has evaporated. Add a little mustard or brown sauce, with tomato or a dressed salad on the side.

Keep the sandwich open if the filling is generous, or use a second slice of bread for a more substantial meal. A small amount of cheese is optional; choose a variety you enjoy and check suitability for anyone with a dietary requirement.

Prepare the sausage fully before assembling. A quick toast or brief warming of the sandwich should not be relied on to cook raw sausage hidden inside it. This approach lets you focus on getting the bread crisp without leaving the centre of the filling underdone.

5. Square sausage with potatoes, cabbage and mustard

Serve cooked Lorne with boiled or steamed potatoes and softened cabbage for a simple meal built from everyday ingredients. Add mustard at the table or stir a little into a suitable sauce. Keep the vegetables fairly plain if you want the sausage seasoning to lead.

You can change the vegetables with what you already have: peas, broccoli or carrots all make practical sides. The aim is to plan one complete plate, not create a complicated recipe requiring several extra purchases. For a smaller appetite, use more vegetables and a modest sausage portion.

Plan a pack across more than one meal

Before opening a larger pack, decide which meals you expect to make and read the storage instructions. Our 1.9kg square sausage and 1.81kg steak Lorne are different products; compare their recipe information, weight and current price rather than assuming identical portions.

Only freeze the product if its label permits it. Some deliveries may contain food dispatched frozen, so do not automatically refreeze it. Use our storage and defrosting guidance alongside the instructions supplied with your order.

Cook raw sausage thoroughly throughout and keep raw-meat utensils separate from ready-to-eat food. These serving ideas do not replace the cooking directions for your exact pack. If a product detail is unclear, contact us before ordering so we can help check it.

Square sausage dinner FAQs

Can you eat square sausage for dinner?

Yes. It works as the main savoury ingredient with potatoes, vegetables, gravy or bread. Breakfast is one way to serve it, not the only one.

What vegetables go with Lorne sausage?

Mushrooms, cabbage, peas, carrots and roasted vegetables are useful choices. Pick the combination that suits your meal and the ingredients you already have.

Can I put raw square sausage inside a sandwich?

Cook the sausage thoroughly first. Briefly toasting assembled bread is not a reliable way to cook a raw sausage filling.

Does steak Lorne work in these meals?

Yes. Use its own cooking instructions and check its ingredients. The same meal ideas can be adapted to either pack in our square sausage range.

Can I use leftover cooked square sausage?

Only if it has been cooled and stored safely. Follow the storage guidance and, if reheating, heat thoroughly and reheat only once.

Are these recipes gluten-free?

Do not assume so. Sausage, bread, gravy and sauces may contain gluten or other allergens. Check every ingredient and choose suitable alternatives where needed.
