What Is Square Sausage? A Guide to Lorne Sausage

What Is Square Sausage? A Guide to Lorne Sausage

, 6 min reading time

Discover what Scottish square sausage is, how it differs from link sausage, what Lorne sausage contains, and how to cook, store and serve it.

Square sausage, also called Lorne sausage or sliced sausage, is a Scottish sausage made in a block and cut into flat slices rather than stuffed into a casing. It is commonly served in a morning roll or as part of a cooked breakfast. Recipes vary, so the name alone does not tell you which meat or allergens a particular product contains.

Is square sausage the same as Lorne sausage?

Yes: square sausage and Lorne sausage are commonly used names for the same type of Scottish sliced sausage. You may also hear it called “slice”. Unlike a link sausage, it has no individual casing and has broad, flat sides.

That shape makes it especially handy in a breakfast roll: a slice sits flat inside the bread. It also gives plenty of surface area for browning in a frying pan. The name describes a style of sausage, not one fixed recipe or brand.

What is square sausage made of?

A typical recipe combines minced meat, rusk or another binding ingredient, and seasoning. Beef and pork are both used in Lorne sausage recipes, sometimes together, and other recipes differ. Expect a savoury sausage flavour, often with peppery seasoning, rather than an identical taste from every producer.

Is Lorne sausage beef or pork? It can be either, or a mixture. Read the ingredients for the exact product you are buying. Do not assume “Scottish”, “square” or “Lorne” means it is beef-only.

Rusk may contain wheat, and other allergens depend on the recipe. Square sausage is not automatically gluten-free. If you have an allergy or other dietary requirement and the information is incomplete, ask our team to check with the supplier before you order. Always read the label on arrival too.

What is steak Lorne sausage?

“Steak Lorne” is used for beef-based versions of the same sliced sausage style. Our Steak Lorne Sausage 1.81kg listing describes minced beef with seasoning. The word “steak” does not, by itself, establish a meat percentage, a particular cut or suitability for an allergy.

You can compare it with our Square Sausage 1.9kg. Pack weight, recipe and current price are more useful buying checks than expecting every pack to have the same slice count.

How to cook square sausage

Follow the product's cooking instructions. For pan cooking, turn slices so both sides brown and the centre cooks fully; reduce the heat if the outside browns too quickly. There is no single reliable cooking time for every slice thickness, starting temperature and appliance.

Raw sausage must be cooked throughout. A browned surface alone does not confirm that the centre is safe. Using a clean food thermometer, check the thickest part reaches 70°C for 2 minutes, or 75°C for 30 seconds, in line with Food Standards Agency cooking guidance.

Can you cook square sausage in an air fryer?

Use the pack's air-fryer directions where provided and your appliance instructions. Leave space between slices and check the centre, not just the colour outside. Do not transfer a frying-pan time directly to an air fryer. Only cook from frozen if the product instructions allow it.

Storing, freezing and defrosting Lorne sausage

Unpack promptly and follow the product label, including its use-by date and any instructions after opening. Keep chilled sausage in a fridge at 0–5°C, with raw meat sealed on the bottom shelf, separate from ready-to-eat food.

Freeze only if the label permits it, before the use-by date. Some orders may contain products dispatched frozen; do not automatically refreeze them on arrival. If their condition or instructions are unclear, contact us before using or refreezing them.

When freezing is suitable, separate into portions and label the packaging. Defrost in the fridge in a container that catches drips, and use within 24 hours of being fully defrosted. Do not refreeze raw sausage after thawing.

Cool cooked leftovers and refrigerate within two hours. Eat within 48 hours or freeze; if reheating, heat thoroughly and only reheat once. See the Food Standards Agency's storage and defrosting advice for more detail.

What to serve with square sausage

  • A roll and sausage: put a cooked slice in a Scottish morning roll, with brown sauce or tomato sauce to taste.
  • A cooked breakfast: serve with potato scones, eggs, mushrooms, tomatoes or beans.
  • A breakfast sandwich: pair it with an egg in toasted bread for a different way to serve the same sliced sausage.

For a larger breakfast, choose accompaniments first and plan portions around appetite and the actual slices in your pack. There is no universal number of servings for a Lorne sausage block.
